Marble CheeseMarble Cheese is so named because of its two toned color. It is made by taking the curds from Colby and Monterey Jack cheeses and pressing them together into a long horn. Because Marble cheese is made from Colby and Monterey Jack cheeses, it is sometimes called "Cojack."
