How to Make Fresh Pasta
We all know that fresh pasta tastes so much better than any dried pasta. But how many of us have actually tried to make it at home?
It might seem daunting, but pasta really isn’t so hard to make. Today we’ll show you how to make it from scratch.
Recipe – Makes enough fresh pasta for 6 people
You will need:
6 large eggs
600g ‘00’ flour
Method – making the dough:
- Put the flour onto a board or in a bowl.
- Make a well in the center of the flour and crack the eggs into it.
- Beat the eggs with a fork until they are smooth.
- Using your hands, incorporate a little of the flour into the eggs at a time, until everything is mixed together.
- Combine the dough until you have one smooth lump.
- Knead the dough to develop the gluten. Stop when the pasta feels smooth and silky.
- Cover the dough fully and rest it in the fridge for at half an hour.
Method – rolling the dough:
You can simply use a rolling pin to roll pieces of the dough until they are lovely and thin.
If you have a pasta machine, the best thing to do is follow the instructions that it comes with as some have different mechanisms. In general, though, this will be your basic method.
- Dust your work surface with some ‘00’ flour. Take a handful of pasta dough, press it flat and roll it through your machine on the widest setting.
- Move the pasta machine down a setting and roll the dough through again.
- Fold the pasta in half. Repeat steps 1 and 2 five or six times, folding each time.
- Once the pasta is very smooth, roll it through all of the settings on the machine from widest down to narrowest.
- If you are making tagliatelle or lasagne, rolling it until it is just slightly thicker than a playing card. For stuffed pasta including ravioli and tortellini, make it thin enough that you can clearly see your hand through it.
- Cut or shape your pasta before it dries. Use a clean, damp cloth to stop it from drying out if you need to.
Shaping and cutting fresh pasta:
For lasagne or tagliatelle, you will simply need a sharp knife to cut the pasta to the desired shape. Your pasta machine may have attachments to cut the pasta. If you are shaping the pasta we recommend finding video instructions that will show you the quickest method. Get the family involved to get the pasta ready before it dries!
To cook your pasta:
- Add pasta to a large pot of boiling salted water.
- It will take 1 to 3 minutes, so watch the pot closely.
- Test the pasta to ensure that it is just slightly al dente before serving.

10 Uses for Jams and Jellies
Whether you love trying different jams and jellies, or you have made lots yourself, sometimes you need to find a way to use some up. Especially at this time of year, when you’ll be thinking about making new jams with all of the lovely summer fruit.
Read on to find out some of our tips and tricks for using up jams and jellies.
- Cakes
You don’t always have to use strawberry or raspberry jam to sandwich cakes together. Try out different flavor combinations and find your favorites.
- Gravy
This might sound a little odd, but trust us: it’s delicious. A little sweetness can go a long way to turning a good gravy into a great gravy. Add a teaspoon at a time and keep tasting; you don’t want to overpower it.
3. Yogurt
Stir jams and jellies into plain yogurt to create a delicious and easy dessert. It’s perfect for when you’re craving something sweet but you don’t want to leave the house.
4. Salad Dressings
Sometimes you might add a little sugar or honey to a salad dressing for sweetness. Try jam instead! Make sure you taste it before pouring it over your salad to make sure that you’ve got the flavors right. A great tip is to take a leaf or veggie from your salad and dip it into the dressing to taste. This way you get to try the flavors together, instead of tasting dressing on its own.
5. Grilled Cheese
We’ve mentioned this before, but jam or jelly can take your grilled cheese to the next level. We especially love this with cheeses like ricotta or mascarpone, but hard cheeses like gouda work well with fruit as well.
6. Barbecue
As the weather warms up and you start to think about cooking on the barbecue, try using jelly as a glaze for meats. Mix your jelly with a little water and heat over a low heat until it is a brushable glaze. Then simply brush it onto the meat.
7. Cocktails
Any cocktail that is shaken can have a spoonful of jam added to it. We especially love apricot jam in a mojito, but this is definitely something to experiment with. Make sure that you give everything a good shake before serving.
8. Pancakes
Pop jams and jellies on the table when you’re serving pancakes and watch them get eaten up! This is especially good with whipped cream.
9. Oatmeal
Oatmeal with a dollop of jam on top is a true joy. Try different flavors to find your favorite. You’ll never have a boring bowl for breakfast again.
10. Biscuits
Sandwich biscuits together with jam or even add a little to the batter to create an added sweetness. This is a quick and easy way to add excitement to your baking. It’s also a fun way to get the kids involved in the kitchen!

Peanut Butter: The Perfect Addition to your Baking
We love finding new baking ideas and we also love peanut butter, so today we are combining the two to share with you some fun ideas for baking with peanut butter.
- Peanut Butter Cookies
Best served with a glass of milk, these are a true classic. Add peanut butter to your cookie batter or spread it on top. You can go for straight peanut butter or add chocolate – choose your favorite. Cookies also make great ice cream sandwiches!
- Peanut Butter Cheesecake
Mix the peanut butter into the cheese, use peanut butter cookies in the base, or even create a peanut butter topping. You could even chop some Heggy’s Milk Chocolate Peanut Butter Creams and stir them in. However you decide to bring peanut butter into your cheesecake, you know that it will be delicious.
- Peanut Butter Brownies
Take your favorite brownie batter and swirl in some peanut butter. You could even add a crunchy topping with some crushed up Peanut Butter Pretzels. Try a blondie with white chocolate if you have a really sweet tooth.
- Peanut Butter S’mores
Just when you thought s’mores couldn’t get any better, we added peanut butter! You can do this in a couple of different ways. Either make a normal s’more and add a smear of peanut butter to one of your graham crackers or replace your chocolate with a peanut butter cup. You could even add some caramel if you want a real treat.
5. Peanut Butter Pancakes
Pancakes aren’t just for breakfast. They make a great dessert too! This filling will work for both. Put peanut butter, chocolate chips and slices of banana in your crepes before rolling them up.
6. Peanut Butter Sundae
Create a sauce by heating 3 parts caramel, 1 part peanut butter and 1 part milk until it is smooth. Pour it into the bottom of your sundae glass. Layer it with ice cream, banana, caramel, and any other ingredients that you like. Top with a sprinkling of chopped peanuts.
7. Peanut Butter Popcorn
Combine peanut butter with syrup to drizzle over popcorn. This is a messy treat so make sure that you have cloths on hand to clean up!
8. Protein bars
If you want to create a healthier treat that will give you plenty of energy, make a peanut butter based protein bar. These can be made with peanut butter, honey, protein powder, and oatmeal, but there are lots of different recipes out there.

How to Start Cooking from Scratch
We know that lots of you are avid cooks already, but some of you will still be learning. We’ve put together our tips for cooking from scratch.
- Stock your cupboards
If you’re going to be cooking food from scratch, then, of course, you are going to need food to cook. Start by making sure your fridge has basics including butter, milk, and cheese. Pick something like a cheddar which will be useful in almost any cheese dish.
For baking, you will need eggs, all-purpose flour, cake flour and pastry flour on hand.
Grab some pantry staples such as canned tomatoes, dried pasta and rice. Pick up some basic herbs and spices, as well as olive oil. Sometimes you can buy a pack of herbs and spices, but a good place to start would be with some salt, pepper, dried oregano, basil and parsley, bay leaves, ground cumin, paprika, chili powder, and garlic. You could also stock up on vinegars and sauces.
There are so many possibilities when it comes to cooking, but these basics will give you a good head start when it comes to making most recipes.
- Get the right equipment
If you’ve never been a cooking fan before, you might not have the right utensils. At the very least, you will need a standard cooking pot, frying pan, spatula, mixing spoon, mixing bowl and a roasting tray. These will get you so far but you’ll gradually want to add more items as you get more adventurous. Looking out for back to school sales, when stores often have great kitchen packs available.
- Plan your meals
To avoid randomly shopping and then creating food waste or being unsure what to make, plan your meals. Find recipes in books or online and use these to make your grocery shopping list for the week. If you are really new to cooking, you might want to commit to only cooking from scratch one day a week, or at the weekend, so keep in mind that you can be flexible with your plan.
- Start simple
You don’t need to wake up one morning and attempt to be a world-renowned chef. Start with simple dishes that you would like to conquer. These could even be side dishes, to begin with. Find a recipe and read it all the way through before beginning to cook. Make sure that you have everything you need, including the equipment required. Follow each step in turn and pay close attention to make sure that you use each ingredient.
- Ask for help
If you know someone who is a great cook, ask them if they might consider giving you some lessons in exchange for a fun evening or even a bottle of wine. If you don’t know anyone with cooking skills, you can also find great courses online or even simply watch YouTube videos. This is great for techniques such as how to chop vegetables or how to check that something is cooked.

6 Ways to Make a Great Hot Chocolate
With a little way to go before Spring, our minds have turned to warming drinks to get us through the last of the cold days. You might have heard of the word ‘hygge’, which is the Danish idea of coziness and contentment. A hot chocolate is definitely a drink that has a hygge feel to it. Today we’re sharing our top tips for making your hot chocolate really sing.
1. Add toppings
There are the classics: marshmallows, cream, chocolate sprinkles. But you could also add cinnamon, sauces, nuts, marshmallow fluff, dried fruits, coconut shavings, or cereals. For extra decadence, try popping a chocolate truffle on the top and letting it melt in. You could even put a scoop of ice cream on the top for extra creaminess. If you add marshmallow fluff, try crisping it with a kitchen blow torch for a s’mores effect!
2. Add a syrup
There are so many syrups available now and loads of them would be delicious in a hot chocolate. Try classics like peppermint, salted caramel or vanilla. You could even try making your own syrups at home with your favorite flavors. We highly recommend trying a bay syrup with your hot chocolate for a grown up twist.
3. Find the best quality hot chocolate
We’re not talking about the powdered stuff in sachets. Get hot chocolate made with real chocolate and you will marvel at the difference. You can even grate chocolate into hot milk to create your ideal drink. Imagine crafting a drink that is essentially your favorite chocolate bar!
4. Try different milks
A hot chocolate made with milk instead of water is the height of luxury, but have you tried different milks? Non-dairy milks are becoming increasingly popular and taste great in hot chocolate. Our favorite is coconut milk which will give you the effect of a Mounds bar in a cup. Almond milk and soy milk also work well and they are a little lighter.
5. Add a glug of your favorite tipple
This is one for curling up on the sofa with your favorite book or movie at the end of the day. Make your usual hot chocolate and then add a little of your favorite spirit. Whiskey or brandy work well but our favorite would have to be Irish Cream. You could try flavored vodkas instead of syrup.
6. Share it with your favorite people
Cozy up with your friends and family and share a hot chocolate. Provide everything above so that you can customize them to your taste. Find your coziest blankets, put on a classic DVD and your warmest slippers and settle in for the night. You can even ask friends to bring over their favorite mug to enjoy their drink in.

12 Ways to Eat Maple Syrup… Without Pancakes!
Sometimes it’s easy to forget about those ingredients that we take for granted, like a simple maple syrup. Our pure amber maple syrup is tapped and processed right here in Ohio’s Amish Country. It’s available in 8oz. and 16oz. sizes so you can stock up for home or buy some as a gift.

1. Add it to your oatmeal

The halloumi recipes that you need to try today

Today, we are going to help you welcome in the New Year with some delicious halloumi recipes.
Last year, we shared a great recipe to make your own mouthwatering halloumi. This is surprisingly easy to make at home. If you’ve shied away from making your own cheese, halloumi is a great place to start. The result is a salty, slightly squeaky cheese that can be grilled or fried to perfection. If you’re missing those summer cookouts, these recipes will pick you up and give you that sunny boost!
Halloumi is best cooked under the grill or in a griddle pan, to get that lovely charred effect that you would achieve on a barbecue in the summer. It can also be baked in the oven with vegetables to add to salads.
Halloumi Burger
If you’re trying to cut down on the amount of meat you eat this year, halloumi can be a great alternative.
What You Need
Oil
A thick halloumi slice for each burger
1 red onion
1/2 tbsp brown sugar
1/2 tsp harissa paste/chopped chilies (optional)
Burger Buns
Salad
Sauces
Equipment
Griddle Pan
Knife
- Add a small amount of oil to your griddle pan. Cut a thick slice of halloumi for each person and fry them until golden brown.
- At the same time, fry up a sliced red onion over a medium heat. When this has become soft, tip in 1/2 tbsp brown sugar and 1/2 tsp of harissa paste or chopped chilies. You can leave these out if you are not a spice lover, but do add the sugar and let the onions become caramelized.
- Grab your favorite type of bun – we like brioche – and layer your halloumi with the caramelized onions, salad, and your favorite sauces.
The beauty of a burger is that you can customize it to make it your own. Choose your salad; add your favorite pickles; change the spices used to your liking.
Halloumi and Watermelon Salad
This is a really refreshing recipe that is sure to brighten up even the coldest of days.
What you need
1 cup (225g) of bulgar wheat/couscous
10 medium slices of halloumi
Olive oil
1 cucumber, halved lengthways to scoop out the seeds and then sliced
Large bunch of mint, finely chopped
Juice and zest of a lemon
2 cups (450g) watermelon chunks
Equipment
Griddle Pan
Knife
Small bowl
Lemon reamer
Salad bowl/large plate
- Cook your bulgar wheat or couscous according to the packet instructions. Set this aside.
- Add a small amount of oil to your griddle pan. Fry your halloumi slices until golden brown.
- Mix the cucumber, mint, and lemon juice and zest with the bulgar wheat or couscous.
- Transfer this to a salad bowl or a large plate. Top with the watermelon, halloumi, and a drizzle of olive oil.

Create A Cheese Board Perfect For Fall
Let’s be honest… it isn’t a party until there’s a cheese board included. This season is one of the best for warm cozy nights followed by a bottle of wine with a delicious cheese board amongst friends.
The most important part of a Fall cheese board is white cheese, but let’s begin with all of the other festive components of our board that is needed before assembling.
The first component is honey. At Shisler’s Cheese House we stock Pure Clover Honey Comb which is perfect for this board. It pairs well with many different kinds of cheese, especially goat cheese.
Fresh fruit definitely gives a fall vibe and flavor. Using a fresh mix of figs and grapes give that whole harvest feel and they go well with cheese.
Nuts is another important component of our board. There are no specific nuts advised, it is all based on your personal preference. Personally, we like to add some Marcona almonds and candied walnuts to our cheese board. The almonds give off a savory flavor whereas the walnuts have notes of sweetness to them from the candying process. This makes them a match made in cheese board heaven.
We always need something a little brim on our board, Olives add that perfect effect. Castelvetrano Olives, in particular, tend to be a good pick.
Finally, crackers and breadsticks. Can’t go wrong with cheese and crackers. Going back to childhood, cheese and crackers were always a delicious snack- nothing changes! Pick out a few different types of crackers in all shapes, flavors, and sizes to give the board some personality.
Now to get into the cheese! Each board needs a variety of cheese.
Firstly, aged cheese. An aged White Cheddar from our website is a delicious addition to our Fall cheese board. The little crystals that develop within the cheese during the aging process give the cheese an extra crunch, which complements the next cheese in particular, really well.
Next, we need a soft cheese. Goat cheese is ideal for this. You need to absolutely try this cheese with the honey, it will change your life!
What is a cheese board without a Blue Cheese? Exactly. Any blue will work for this addition, but at Shisler’s we recommend our Danish Blue. The flavor isn’t completely overwhelming and makes a perfect contrast to go with the other cheeses.
The last cheese needed for a cheese board is, of course, a firm one. A particular favorite to use is our Smoked Cheddar. The flavor is sharp and pungent with a firm texture. Not only that, it adds some Fall color to the board, which is perfect as it is a Fall board after all!
Now that you have all you need, you can get started assembling your board! Get yourself a big board and start arranging it how you like. It’s important to keep the presentation simple and bountiful. Tuck the cheeses into each other and then add your fresh fruit when you need to add some color. Your board is then ready for all of your Fall entertainment!

When the milk coagulates it separates into solid curds and liquid whey, which is drained off. The result at this stage is sometimes referred to as pot cheese. Further pressing out of the moisture results in a more firm and crumbly Farmer’s Cheese. It is often enjoyed in a sandwich with delicious bologna from our store, which is why it why this gift box is an amazing combination.
Colby cheese is a semi-hard cow’s milk cheese native to the United States. But today Colby cheese is made in other regions of the world as well. It is often compared to cheddar cheese since the two both typically appear orange or creamy yellow. But two kinds of cheese taste very different. The flavor of Colby cheese is much milder and creamy. Washing the curds reduces the acid content, making Colby cheese less tangy when it is finished. Colby also has a higher moisture content, and it tends to be much softer than cheddar. Colby often goes well with rye bread, pears and apples. It can also be used as a table cheese, the possibilities are endless.

Orange Cheddar is traditional white cheddar with Annatto, an extract from the tropical achiote tree, and oleoresin paprika added. These added ingredients give the orange cheddar its orange color and a milder flavor. Many connoisseurs claim that White Cheddar is slightly sharper than orange cheddar, but that is more dependent on aging than color.
Marble Cheese is so named because of its two-toned color. It is made by taking the curds from Colby and Monterey Jack cheeses or white and orange Cheddar curds and pressing them together into a Longhorn. Because Marble Cheese is made from Colby and Monterey Jack cheeses, it is sometimes called “Cojack.”

Colby cheese is a semi-hard cow’s milk cheese native to the United States. But today Colby cheese is made in other regions of the world as well. It is often compared to cheddar cheese since the two both typically appear orange or creamy yellow. But two kinds of cheese taste very different. The flavor of Colby cheese is much milder and creamy.
