Gouda is a yellow cow’s milk cheese with a red or yellow wax coating. Gouda is made by culturing and heating the milk until the curd is separated from the whey. Some of the whey is then drained, and water is added. This is called “washing the curd”, and creates a sweeter cheese, as the washing removes some of the lactic acids. As it ages it develops a caramel sweetness and sometimes has a slight crunchiness from salt-like calcium lactate or tyrosine crystals Our cheese is imported from the Netherlands, where it originated. But the name is not protected and there are numerous imitators, so make sure any Gouda you buy is authentic.
Gouda was named for the province in south Holland where it was originally developed. There are now numerous variations of the original, as well as multiple imitators.
Gouda is known for its compatibility with a wide array of beverages. The best match is beer. It pairs very well with Bock, Brown Ale, Lager, Pale Ale, Porter, and Stout.
